Do you serve frozen fish?
 
 
 
To put it simply, yes. Most of the fish served at our restauant and most Japanese/Sushi restaurants is pre-frozen fish. There are many reasons why fish is kept frozen. The first and for most is for health safety. By freezing fish to -5 degrees F, all the bacteria that could be in or on the fish is removed. The second most important reason is for transport. We serve many veriaties of fish that come from all over the world. Because most of the fish come from so far away it is issential to flash freeze the product for transport. This does not mean all the fish is delivered to us frozen. Because of health codes governed by the state of Montana we are only aloud to serve red tuna with out freezing to -5 degrees F.
